How to use

1. Grind meats 1/8 inch. Use fresh, cold meats (30 degrees pre-grind temperatures). 2. Mix meats with seasoning, 1 oz. bag of Sodium Nitrite included and 2.5 lbs. of ice cold water for 3 to 5 minutes. 3. Regrind 1/8 inch and stuff into 19 to 21 mm collagen (snack stick) casings. 4. Smoke/Heat to 160 degrees internal temperature.
