Legg Blend 10 Breakfast Sausage Seasoning is a Southern-style pork sausage seasoning with a relatively high level of sage, red pepper and black pepper, some of the red pepper crushed so it stays visible in the finished sausage. Each 8 oz bag seasons up to 25 lbs of meat, and this two-pack seasons up to 50 lbs, so one order covers multiple large batches of links, patties or bulk sausage.

Mix one bag with 25 lbs of approximately 80/20 lean pork, or use it on beef, deer, elk and other game meat, cutting game with 50% pork for the best flavor and fat content. Empty the seasoning into the cubed meat and mix thoroughly, then stuff into natural casings for links or pack into freezer bags. For smaller batches, use 1 oz (2 tbsp) of seasoning per 3 lbs of meat.
